Breakfast : Egg Cheese Guacamole Sandwich


Am not a glutton but am an explorer of food and remember no one is born a great cook, one learns by doing.

Cooking requires confident guesswork and improvisation– experimentation and substitution, dealing with failure and uncertainty in a creative way.

With my kitchen experiments, I came up with a sumptuous breakfast recipe with some fusion ideas. Ever since I ate the guacamole few years ago, I have always been its fan. Today I came up with an idea to use it in my sandwich.

Recipe: Egg Cheese Guacamole Sandwich

Serves 1 person
Cooking time 5 mins
Preparation time 15 mins



Ingredients :
Whole wheat Rye bread – 4 slices
Guacamole spread – 3 tbsp
Cucumber – sliced thin
Eggs – 2
Cheese – 2 slices
Lettuce
Butter – unsalted


Procedure :
1) Heat the pan and crack the egg to make them small omelette. Prepare 2 with 2 eggs. 
2) Spread the butter on the bread slices and toast them light brown in the toaster
3) Spoon the guacamole on 1 side of the slice liberally
4) Place lettuce leaves, two slices of tomato, few slices of cucumber and 1 cheese slice. Sprinkle little salt and pepper over the vegetables if required.
5) Spread a little guacamole on the other bread slice and close with the guacamole side facing down. Press to make them stick together as shown in the picture. Cut into triangles and enjoy!! 


Note:
1) Those who do not eat eggs can skip the egg and their choice of vegetables or tofu
2) With roasted asparagus and mushroom seasoned with salt, pepper and oregano to make a filling breakfast
 
3) Guacamole Spread Recipe
2 medium avocados
1 firm tomato, finely diced; 1/2 white onion; 1/2 cup chopped cilantro;
Salt and pepper to taste;

Preparation:
1) Open the avocados and scoop out the flesh. An easy way is to cut it length-wise around the pit and then using a chef’s knife strike the pit and then twist the knife so you can easily remove the pit and scoop out the flesh.
2) Mash the flesh with a fork, it can still have hard parts, follow your preference..
3) Stir the other ingredients.
4) Enjoy right away or store in the refrigerator.
